MY MATE STAV, HIS DAD’S GREEK LAMB

What we need…..

1 GOOD SIZE LEG……(The lambs….not yours….idiot!!)
JUICE FROM A COUPLE OF LEMONS
A GOOD SPLASH OF OLIVE OIL
6 CLOVES OF GARLIC
SEA SALT
GROUND BLACK PEPPER

  • Light your spit as per instructions
  • Cut a couple of pockets into the lamb
  • Cut your garlic into slices and shove them into the lambs pockets
  • Mix your lemon juice and olive oil and rub this into your roast…… stop now……
  • Have a beer and a lie down
  • Shake a bit of salt and pepper over
  • Whack it on the spit for a couple of hours
  • Squeeze some extra lemon on it while it’s cooking
  • I chuck some rosemary sprigs on the coals as it cook’s but Stav’s old man thinks I’m an idiot……
